Peach Bellinis

INGREDIENTS:

4 oz Prosecco (Italian sparkling wine)
1 oz White peach puree
1 oz Simple syrup

PREPARATION:

Peel and purée 3 to 4 very ripe white peaches; Mix nectar with simple syrup. 

Stain through coars cheesecloth, refrigerate until chilled. 

Pour one ounce of nectar into champagne flute, top with Prosecco.
